Flour coins in Guar bean OR Gavar Sing ni Dhokli

I learnt this classic recipe from my mom. It is typically part of Indian - Gujarat or Rajasthan cuisine.
It has a dual purpose. It is standalone main dish, and also as a curry or dal with steamed rice. Typical preparation time which is cutting the beans and kneading the flour takes about 25 minutes.
And cooking typically takes 30 minutes, which is largely unattended, other than some stirring every 7-8 minutes to avoid any of the coins sticking to the vessel.
Ingredients:
Instructions:Heat some oil, add the boiled beans alongwith sufficient water.
After water is boiling, add salt, turmeric powder and the wheat coins.
Let it boil for some more time till the gravy is thick.
Many people also add gur and kokam to this. Additional spices like cardamom, cinnamom can be added as per your taste.

- Wheat Flour, thick and granular ground
- Guar Beans
- Salt
- Turmeric Powder
- Ajwain
- Cumin Powder
- Sunflower Oil
- Water
Instructions:
- First boil gavar sing and then add salt, turmeric powder and ajwain.
- Add salt, turmeric powder, oil, cumin powder to Wheat flour. The condiments must be added in proportion to the flour, obviously. Knead dough softly, ensuring that it is not too dry and solid.
- Once a well mixed soft dough is ready, flatten it with a rolling pin. The thinner the dough is rolled, the better will it cook.
- After flattening the dough, make small coins (or whatever shape you like) of this dough.

Fried Chapati / વઘારેલી રોટલી
This recipe is useful when you have chapatis left over..
1 Keep mustard seeds and chapatis to be fried ready.
2. Start heating oil.
3. Break chapati in small pieces.
4. Put mustard seeds in heated oil
5. Once seeds start bouncing / Once seeds sufficiently hot - add chapati pieces
6. Add salt, chilli, turmeric powder.
7. Stir till it changes color to light / dark brown.
You can add some other things like jeera powder, oregano (from Domino's / Pizza Hut - we have all saved up at some point, haven't we ?), or even a bit of maggi masal for taste.
Please do not use chapatis more than a day older for this.. A simple test whether chapatis can be used - Chapatis having mold or stinking cannot be used.

Sheera / ગહુ નો શીરૉ

The very first item we are putting up is Sheera By my mother, Minalben Desai. Yes the sweet, heavy and energizing stuff !! This is an all time favorite, as an accompaniment for lunch, or as a morning snack.
Cook time: 15 minutes
Ingredients:
The very first item we are putting up is Sheera By my mother, Minalben Desai. Yes the sweet, heavy and energizing stuff !! This is an all time favorite, as an accompaniment for lunch, or as a morning snack.

- Water OR Milk
- Wheat Flour
- Sugar
- Ghee
- Take wheat flour - about 1 small vati and 3-4 spoons of ghee.
- Take a large glass of water/milk mixture and boil it on the side.
- Melt the ghee in a pan on slow flame.
- Heat/roast the flour in the ghee without using any other liquids. Initialy let the flame be on very low, and continue stirring the flour (to avoid forming balls or burning parts of flour) after adding it to the ghee. Heat till the flour changes colour.
- Add parts of the boiled water + milk to the flour depending on the viscosity required.
- While stirring it add about 4-5 spoons of sugar.
- When it starts emanating the sweet smell of sheera, you can stop the flame. Have your sheera once it cools down a little.
